7 Bean Soup Mix

Recipe
Water 2 quart
Natural Seven Bean Soup Mix 1 ½ cup
Onion (diced) 1 cup
Celery (diced) ½ cup
Carrots (diced) 1 cup
Ham Broth 5 Tbsp
Black Pepper ½ tsp
Ham (cooked & diced) 2 cups
Flour ¾ cup
Egg 1 each

Instructions:
Place Natural Seven Bean Soup Mix in a separate bowl and cover with 4 cups of water, cover and place in refrigerator overnight.
Drain Natural Seven Bean Soup Mix.
In a saucepan, bring 2 qt of water to a boil, add the drained Natural Seven Bean Soup Mix, ham broth, onions, celery, carrots and return to a boil.
Reduce heat to a simmer and cook until the vegetables are tender.
Beat egg. Place flour in a separate bowl. Pour egg in the middle of the flour, use a fork to stir gently the egg thru the flour to form crumbles.
Sprinkle crumbles into boiling broth. Cover and simmer for 10 minutes.
Add cooked diced ham and black pepper.
Remove from heat.
Check seasonings and serve.
